A sweet and fragrant broth is concocted from an exotic and heady mix of herbs, spices and aromatics, including pepper, star anise, with curry leaves, Thai ginger, cinnamon and rock sugar. Lamb is cooked for several hours beforehand, which adds extra flavour. The result is a fresh and fragrant dish that is clear with tender lamb of intense flavour without being greasy. The faint finish of the spices provides a lingering taste that is unforgettable.
